Ceviche on Board: The Culinary Experience of Our Fishing Tours
From sea to plate in 30 minutes
On our 6 and 8-hour sport fishing tours, we offer a culinary experience no restaurant can match: fresh ceviche prepared on board with the catch of the day, just minutes after the fish is pulled from the water.
What makes our ceviche special
- Absolute freshness: from sea to plate in under 30 minutes
- Family recipe: Captain Jorge Ibarra's, with over 15 years perfecting it
- Local ingredients: Colima lime, serrano chili, fresh cilantro
- Fish of the day: varies with the catch (Mahi-Mahi, Tuna, Roosterfish, Sierra)
The captain's recipe (no secrets)
Ingredients for 4 people
- 500 g fresh fish in cubes (Mahi-Mahi, Tuna or Sierra)
- 6 large limes (about 1 cup of juice)
- 1 red onion, finely chopped
- 2 tomatoes, diced
- Fresh cilantro to taste
- 1 serrano chili, chopped (optional)
- Salt and pepper
- Avocado (optional, for garnish)
Preparation
- Fillet the freshly caught fish into 1 cm cubes
- Place in a bowl and cover with freshly squeezed lime juice
- Let rest 10-15 minutes so the lime "cooks" the fish
- Add onion, tomato, cilantro and chili
- Season to taste and mix
- Serve immediately with saltines or tortilla chips
Why does sea-to-plate ceviche taste different?
Fish caught today and prepared today has a firmness and natural sweetness that is lost after 12 hours on ice. The difference is noticeable even to non-experts.
The setting matters too: eating freshly made ceviche at sea, with the breeze and Punta de Mita landscape, is a sensory experience no restaurant can replicate.
Which tours include it?
| Tour | Duration | Ceviche on board |
|---|---|---|
| Inshore Fishing | 3 hours | Only if there is a catch |
| Half-Day Fishing | 4-5 hours | Only if there is a catch |
| 3/4 Day Fishing | 7 hours | ✅ Always |
| Full Day Fishing | 9-10 hours | ✅ Always + lunch |
What if we don't catch anything?
On 6 and 8-hour tours there is always a chance of a catch, but if nothing is caught (rare), the captain prepares ceviche with fresh fish bought that morning at the marina. You never miss ceviche on long tours.
Gastronomic recommendations
- Pair with light beer or mineral water
- Add a few drops of Valentina or Tabasco sauce if you like spicy
- Ask the captain about the fish of the day before ordering
- Do not eat ceviche on an empty stomach: it can be strong
